Celebrity chef Michael Moore unveils new Sydney establishment – O Bar and Dining

In one of the most significant announcements for Sydney’s restaurant scene in recent times, celebrity chef and author Michael Moore has made publicdetails of a new restaurant to replace his Summit restaurant atop the iconic Australia Square. Rumours have been circulating for several weeks that major changes were afoot for the famous venue with Moore having confirmed last month that the Summit will close on September 8th.

Moore has announced that O Bar and Dining will officially launch with a star-studded event next Wednesday 12 September. Though housed in a space familiar to most Sydneysiders, O Bar and Dining will be a restaurant completely unlike its predecessor.

The vast circular space with spectacular 360 degree views will offer a new multi-layered bar and dining experience; featuring a central lobby bar, lower level lounge bar, restaurant and private dining room, offering something for everyone.  Perfect for those looking for the style and vibe of a world-class venue with a mix of drink & dining options.  

The simple, plush interiors and stylish palette of chocolate browns, silvers and graphites contrast with the amazing views outside, capturing the glamour and excitement of this iconic location.  

Seasonality and ripeness drive the creativity of the food.  Uniquely, the menu is underpinned by Moore’s Blood Sugar philosophy of healthy eating and living. “Great food can be local, sustainable and interesting. Most of all it has to be flavoursome and innovative, whilst still being good for you”

At a time when many Sydney restaurateurs are struggling or even closing up shop, Moore’s re-creation of the venue could be seen as daring.  However the celebrity chef, author and nutrition advocate says it was necessary to ensure long-term success.

“O Bar and Dining represents an exciting new chapter for this venue and for the dining scene in Sydney,” says Moore. “Although the Summit had been a fixture of the local dining scene for many years, this re-birth is an essential move forward to meet the emerging trends of the moment. -The launch of O Bar and Dining represents a complete redesign and the creation of new bar and dining options under one roof.  Even for those who were Summit regulars, this will be an entirely new venue to experience”

Moore has been proprietor of the venue since taking ownership in 2007. He has previously helmed restaurants such as Bennelong, Pruniers, Wildfire and London’s Bluebird Gastrodome and has carved out a media career for himself with regular television appearances and two globally successful cookbooks to his name.

O Bar and Dining will be open sevennights per week and for lunches from Wednesday to Friday.
